Brew Better: Dialing In Ubud Nightfall for the Perfect Latte

If your morning is espresso and oat milk on autopilot, this one's for you. Ubud Nightfall is our darkest roast, and we designed it specifically to punch through milk without disappearing — thick, chocolatey, with a crema that actually looks like something. But a great milk drink starts before the milk. It starts with a dialed-in shot.

Here's our house recipe, and it's a forgiving one on purpose: 18 grams of coffee in, 38 grams of espresso out, in 27 to 30 seconds, with your water around 93°C. That roughly 1:2 ratio and slightly longer window gives you margin — a grind that drifts a click through the week or a tamp that isn't laser-level won't wreck your shot. Start there and adjust one variable at a time.

If your shots run fast and sour, grind finer. If they run slow and bitter, grind coarser. Change one thing, pull again, taste. The single most common home-barista mistake is chasing three variables at once and ending up more confused than when you started. Patience beats gadgets here — a $30 scale and a timer will do more for your coffee than a $300 upgrade.

Now the milk. Steam it to about 60°C — hot enough to be comforting, not so hot it scalds and goes flat. You're looking for glossy, paint-like microfoam, not stiff bubbles. Pour slowly to combine, then speed up and drop the pitcher close to the surface for latte art. Even if your heart looks like a blob, the texture is what makes the drink taste luxurious.
